====== Mango Chutney ====== Mango chutney can be used very flexible. Use it as a dip, spread, marinade, or just eat it by the spoon :D Below recipe will be enough to fill a medium sized pot. ===== Ingredients ===== * Three (3) ripe mangoes * Two (2) lemons (juice) * One (1) Habanero chili * Three (3) to four (4) large onions * 100g grown sugar * Plenty of garlic * Ginger * Pepper * Salt * Peanut oil ===== Tools ===== * Medium sized pot * Cutting board * Sharp knife ===== Time Requirements ===== Most of the time goes into preparations. Once everything is in the pot you can let it cook at low temperature for a while, checking in every couple of minutes. ===== Preparation ===== * Cut onion, habanero, garlic, ginger into small pieces * Cut mango into small chunks * Heat the pot and add peanut oil * Add habanero, garlic, ginger and stir * Add onions and cook till they just about start turning translucent * Add sugar * Add a little salt and some pepper * Add mangoes * Keep cooking at low temperature until you like the consistency
